I am always looking for summer salads that are not only good for you but easy to make. Our vegetarian neighbors shared this salad recipe with us and I found it so tasty and easy to make that I just had to share! Thinking of our inn keeper friends that are working especially hard this summer- this would be a great healthy option to have in the frig when the day runs away with you. This afternoon I wrapped mine with bib lettuce and it was oh so tasty and such a treat.

Healthy bean salad that is so easy to make
Prep Time 20 mins

Ingredients
  

  • 2 tbsp Extra Virgin Olive Oil
  • 2 cans Chick Peas drained and rinsed
  • 2 teasp Capers
  • 2 tbsp Green Olives chopped
  • 3 stalks Celery
  • 3 tbsp Plain yogurt
  • salt to taste
  • pepper to taste
  • 1/2 teasp Garlic Powder
  • 1 teasp Miso

Instructions
 

  • Drain and rinse the Chick Peas. Smash peas but keep some lumps. Add olive oil and the rest of the ingredients and mix well. You can eyeball your ingredients and change it up with different beans and soy sauce for a different flavor.
